Groningen’s Own Local-Ingredients Sandwich Broodje Grunn Is Coming
A new regional sandwich made with local ingredients, co-created by BBENG, Hanze and Noorderpoort students, with a bakeathon in October.

Groningen is developing Broodje Grunn - a regional sandwich made entirely from Groninger ingredients and meant for menus across the province (hospitality, caterers, institutions). The idea is led by BBENG with the municipality, province, local businesses, and students from Hanze and Noorderpoort.
A three-day “bakeathon” in October will let about 50 Noorderpoort bakery students co-create the first recipe by visiting a farmer, mill, and bakery. The concept and recipe will then be refined at the Promotiedagen business event in Martiniplaza on 4–5 November 2025. After that, organisers aim to place Broodje Grunn on menus across Groningen.
The project is designed to shorten food supply chains and make regional sourcing easy for buyers, similar to how other cities created their own sandwiches to boost local producers. Groningen’s version follows examples like Rotterdam’s RotterBammetje, Nijmegen’s Broodje Nimma, and Friesland’s Broodje Boppe, each built around local, seasonal ingredients and fair pricing for farmers.
Organisers are inviting businesses and institutions to join and suggest ingredients that best reflect the province, think local grains and flour, Groninger cheeses, vegetables, and mustards. A call to participate and help get Broodje Grunn “on the (menu)map” has been issued to the regional network.
